Flat burrs tend toward a tighter, more uniform grind that tastes like clarity and separation. Conical burrs throw more fines and a wider spread that reads as body and traditional sweetness. Both are real tendencies rather than laws, and the specific burr set and its alignment matter more than the shape stamped on the box.

How Each Geometry Cuts Coffee

A flat burr set is two parallel steel rings with cutting teeth machined into their faces. Beans drop into the center, and centrifugal force drives them outward between the rings, where progressively finer teeth crack, cut, and finally shave them to size before they exit at the rim. The particle path is horizontal, the speeds are high, and the coffee spends very little time in the cutting zone.

A conical burr set is a cone-shaped burr spinning inside a serrated ring. Beans feed by gravity, get cracked at the wide top of the cone, and tumble down through tighter and tighter cutting zones until they fall out the bottom. Because gravity does half the feeding work, conicals cut efficiently at low speed and low torque. That is the story, and it is broadly true. It is also the part people overweight.

Why Burr Design Beats Burr Shape

Here is the honest caveat that belongs in every flat vs conical argument: geometry is one variable, and rarely the biggest. Tooth pattern, burr diameter, rotation speed, and above all alignment shape the distribution at least as much as the flat or conical question. A flat set sitting a few hundredths of a millimeter out of parallel loses exactly the tightness you paid for. And two flat sets cut for different goals, one chasing clarity and one chasing body, can differ more from each other than either differs from a good conical.

Does Geometry Matter More for Espresso or Filter?

Noise. A bigger motor at higher speed makes flats the loud option in most kitchens. A hand-cranked conical is nearly silent if the household is still asleep.

Who Should Choose Which?

At entry level, do not choose on geometry at all. Under a couple hundred dollars, execution decides everything: burr machining, alignment, adjustment quality, retention. When you upgrade, start from taste rather than spec sheets. If your favorite cups are delicate washed coffees and you keep chasing clarity, a well-aligned flat is the honest next step.
