Any milk frother will put foam on a drink, but only a steam wand, and a handful of the best electric jugs, make true microfoam: the glossy, pourable texture behind cafe flat whites and latte art. A cheap whisk wand or the French press in your cupboard is enough for a cappuccino cap. Pouring a rosetta takes steam or a very good jug, and technique matters more than either.
What Is Microfoam, and Why Does It Matter?
Cafe-quality steamed milk is not foam floating on hot milk. It is one continuous texture, milk and air folded together so finely that the surface shines like wet paint and the whole pitcher pours like lightly thickened cream. That is microfoam. It is what lets a barista pour a rosetta, and why a good flat white tastes dense rather than airy.
Stiff, dry foam with visible bubbles is the opposite result: a cap that sits on top and will not pour. Most cheap frothers make this by default. How Does Milk Actually Foam?
Cow's milk is roughly 3.3 percent protein per USDA nutrient data, about four fifths casein and one fifth whey. Whip air into it and those proteins gather at each bubble's surface and form a skin that holds it. Whey proteins do much of the stabilizing, and gentle heat helps them unfold and grip the bubble surface, which is why milk textures best while it is warming rather than after.
There is a ceiling. Past roughly 70°C (158°F) the whey proteins denature, foam stability drops, and the milk picks up a flat, cooked flavor. Milk also tastes sweetest to most people at around 60°C (140°F). Put those together and you get the target every barista program teaches, the SCA's included: stop between 55 and 65°C (131 and 149°F). Overheated milk will not foam well a second time, because its proteins are already cooked, so never re-steam what is left in the pitcher.
Fat is the other variable. US whole milk must contain at least 3.25 percent milkfat under the FDA standard of identity, and that fat is what makes whole-milk foam glossy and rich. Fat also slightly destabilizes foam, which is why skim milk foams taller and stiffer, and why cafes chasing silky texture rather than volume use whole milk. Start with milk straight from the fridge, about 4°C (39°F), so you have more time to add air before it reaches temperature.
Which Type of Milk Frother Should You Buy?
Handheld whisk wand. A battery-powered spinning whisk, usually under $20. It adds air but no heat, so you warm the milk first. Ceiling: light, bubbly foam, fine for a quick cappuccino cap or for sweet cream cold foam, nowhere near pourable microfoam.
French press pumping. Hot milk in the carafe, pump the plunger 20 to 30 times. Ceiling: dense, creamy foam that gets close to microfoam once you find the rhythm. Free if you already own one, but the mesh screen holds onto milk and needs a proper wash.
Electric heat-and-spin jugs. A jug with a heating element in the base and a small magnetic whisk that spins the milk while it warms, then typically shuts off around 60 to 65°C (140 to 149°F). The category is wildly uneven: the best produce pourable microfoam at the push of a button, while cheap ones make warm bubble bath. Many froth only 120 to 150 ml at a time, roughly one latte's worth. Quiet, hands-off, easy to clean.
Standalone steamers. A small boiler with a real steam wand and no espresso machine attached, stovetop or electric. True steam texture, true steam technique required, dedicated counter space. Worth it mainly for moka pot or capsule drinkers who want cafe texture without a full espresso setup.
Machine steam wands. The top of the ladder. Steam condensing into the milk heats it in seconds, while the tip's position controls how much air goes in and how hard the pitcher spins. The dividing line: latte-art microfoam needs steam or a very good electric jug. Everything below that line makes foam you spoon onto a drink rather than pour into it.

How Do You Froth Milk Without a Steam Wand?
- Whisk wand: heat the milk to 55 to 65°C (131 to 149°F). Hold the whisk head just under the surface until the volume grows by about a third, then plunge it deeper for 10 to 15 seconds to break up the big bubbles. Tap, swirl, pour immediately.
- French press: fill the carafe no more than a third full with hot milk, pump briskly 20 to 30 times, rest for 30 seconds, then tap and swirl before pouring.
- Electric jug: use the foaming whisk rather than the stirring disk, respect the foaming max line, and pour the moment the cycle ends, because the foam stiffens as it sits.
- Steam wand, for when you have one: purge, stretch with the tip just under the surface for the first 3 to 5 seconds (a soft paper-tearing hiss, a few seconds longer for a cappuccino), then bury it slightly off center to spin a whirlpool until the pitcher is just too hot to hold, roughly 60°C (140°F). Whatever the tool, the sequence is the same: add air early, integrate it while the milk is still warming, stop at 65°C (149°F), and pour without hesitating.
Do Plant Milks Froth?
Yes, selectively. Foam needs protein, and many standard plant milks carry very little: almond and rice typically have well under 1 g per 100 ml, against about 3.3 g in dairy. Barista formulations exist for this reason. They add oil for body, sometimes extra protein such as pea, and an acidity regulator such as dipotassium phosphate that keeps the milk from splitting in hot, acidic coffee. That is why they froth finer, pour glossier, and cost more. The word "barista" on the carton marks a different recipe, not just a markup.
Oat gets closest to dairy texture and has become the cafe default. Soy has protein levels close to dairy and foams well, but it can curdle with brighter, more acidic roasts. Almond and rice run thin unless you buy the barista version. Our best milk for coffee guide compares them cup by cup.
The Bottom Line
Buy the tool that matches the drink you actually make. An occasional foam cap on a cappuccino: a whisk wand, or the French press already in the cupboard. Daily lattes without an espresso machine: a good electric heat-and-spin jug is the honest sweet spot, and a little more money within the category buys a real jump in texture. Latte art ambitions: only steam, or the very best jugs, will get you there, and technique will matter more than the hardware.
Skip the upgrade if you drink your coffee black or mostly iced, and skip a standalone steamer if an espresso machine with a decent wand is already on your wish list. Whatever you choose, stop at 65°C, because scalded milk ruins better foam than any gadget can rescue.
