An espresso brew ratio compares the weight of dry coffee in the basket with the weight of liquid espresso in the cup. Pull 18 g of grounds into 36 g of beverage and you have a 1:2, the modern default. Shorten or lengthen that second number and you change strength, texture, and flavor more than any other decision you make at the machine.
What Does a 1:2 Espresso Ratio Mean?
The first number is the dose, the dry coffee loaded into the basket. The second is the yield, the mass of espresso in the cup when the shot stops. Yield on its own is a weight: 36 g of espresso. Ratio is that yield set against the dose: 18 g in, 36 g out, 1:2. Stop the same dose at 27 g and it is a 1:1.5. Let it run to 54 g and it becomes a 1:3. Some baristas write the yield first (2:1). Same shot, different notation.
Both numbers are weighed, never eyeballed. Volume lies in espresso because crema is foam, mostly carbon dioxide trapped in a thin film of liquid. Two shots of identical height in the glass can differ by several grams of actual coffee. A 0.1 g scale under the cup removes the guesswork and costs less than a good bag of beans.
The volume habit is historical. The Italian Espresso National Institute still certifies traditional espresso as about 7 g of coffee yielding 25 ml in roughly 25 seconds, a standard written for dark roasts and marked shot glasses. How Do Ratio, Grind, and Time Interact?
Ratio decides how much water passes through the puck. More water extracts more from the grounds, but it also dilutes what it extracts. So as the ratio lengthens, extraction rises while strength falls, two dials moving in opposite directions at once. Our strength versus extraction guide untangles that distinction properly.
The arithmetic makes it concrete. Extraction yield is the percentage of the dry dose that dissolved into the cup: TDS multiplied by beverage weight, divided by dose. Pull 18 g to 36 g at 10 percent TDS and you have extracted 20 percent of the coffee. Stretch the same grind to 54 g and strength might fall to 7 percent while extraction climbs to 21 percent. Cut it to 27 g at 12 percent TDS and extraction drops to 18 percent: a stronger cup that is also less extracted. Most baristas borrow the 18 to 22 percent window from the SCA's brewed coffee standard as a rough espresso target, and shots that taste balanced usually land inside it.
The practical consequences at the machine:
- Lengthen the ratio, same grind: more extraction, lower strength, longer shot time.
- Shorten the ratio, same grind: less extraction, higher strength, shorter shot time.
- Grind finer, same ratio: slower flow, more extraction, and more strength from the same yield, until the puck starts to channel.
Caffeine barely follows any of this. It dissolves early and easily, so a ristretto leaves a little behind, but past 1:2 a longer ratio adds very little. Dose sets caffeine; ratio sets taste.
Change one variable at a time. Lengthen the ratio and tighten the grind in the same shot and you have no idea which change did what. Hold the dose steady, move one dial, taste, repeat. How Do You Dial In an Espresso Ratio?
- Match the dose to the basket. An 18 g basket wants 18 g, give or take a gram. The dose calculator gives a starting dose and yield if your basket size is a mystery.
- Fix the yield. Put the cup on a scale, tare it, and commit to stopping the shot at 36 g, a straight 1:2. Allow for the gram or two that drips after you hit stop.
- Adjust grind until the timing lands. Aim for 25 to 30 seconds from the pump starting, on a machine without long preinfusion. Faster than 20 seconds, grind finer. Slower than 35, grind coarser. Do not touch the ratio yet.
- Taste and nudge. Sour, sharp, or thin points to underextraction: go slightly finer, or stretch the ratio toward 1:2.5. Bitter, drying, or hollow points to overextraction: go coarser, or shorten toward 1:1.5.
- Give it two or three shots. A new bag needs a few pulls before you judge it, and the first shot after a grind change often flows oddly because of old grounds in the chute.
When Should You Deviate From 1:2?
Light roasts open up at longer ratios. Lightly roasted coffee is denser and less soluble, and at 1:2 it often tastes sharp and stingy. Scott Rao has argued for years that lighter roasts want more water through the puck, and in our experience 1:2.5 to 1:3 is where the sweetness and florals actually arrive.
Dark roasts suit shorter ratios. Dark roasted coffee gives up its solubles fast, and the pale water at the end of a long shot carries mostly roasty bitterness and astringency. Stopping between 1:1.5 and 1:2 keeps the shot thick, chocolatey, and comfortable.
Gushing, channeling shots want a longer ratio, not a shorter one. Shorter ratios need finer grinds and cleaner puck prep, so a grinder that cannot hold a 1:2 at 25 seconds will not manage a 1:1.5 either. Coarsening the grind and stretching to 1:3 in about 15 seconds usually gives a more even, sweeter cup than fighting for a slow shot. It tastes lighter and juicier, but it repeats.
How Do Ratios Land in Milk Drinks?
Milk is dilution, so concentration decides whether your coffee survives it. A ristretto or a tight 1:2 punches through a latte. A delicate 1:3 mostly disappears into one, leaving expensive coffee flavored milk.
The working rule: the bigger the milk, the shorter the ratio, or the bigger the dose. A flat white earns its reputation on a concentrated shot, which is why many cafes build one on a double ristretto. A cappuccino sits happily on a standard 1:2. A 12 oz latte wants either a 1:1.5 or a 20 g dose pulled to 1:2.
