Turbo Shots: Faster, Gentler, Surprisingly Sweet Espresso

Turbo shot espresso means a coarser grind, a 1:3 ratio, about 6 bar, and a 15 second shot. The research behind it, a starter recipe, and honest trade-offs.

A turbo shot is espresso pulled coarse and fast: 18 g in, 54 g out (1:3), finished in about 15 seconds, at roughly 6 bar if your machine allows it. You give up the syrupy body and thick crema of a classic shot and get sweetness, clarity, and shots that repeat. If your espresso is inconsistent, this is the cheapest experiment worth running.

What Is a Turbo Shot?

A turbo shot flips most of the classic espresso recipe. Grind several steps coarser, keep the dose, push the ratio out to about 1:3, and let the shot finish in half the usual time. A traditional shot pulls 18 g into 36 g over 25 to 30 seconds at 9 bar. A turbo pulls the same 18 g into 54 g in 12 to 18 seconds, ideally at about 6 bar on machines with an adjustable OPV, flow control, or pressure profiling.

Where Did the Idea Come From?

The starting point was a 2020 paper in the journal Matter, "Systematically Improving Espresso," led by Michael Cameron and mathematician Jamie Foster with computational chemist Christopher Hendon of the University of Oregon and collaborators. They built a mathematical model of espresso extraction, then tested it for a year in a working cafe in Eugene, Oregon.

Two findings matter here. First, extraction yield peaks at a moderate grind setting and falls at both extremes. Grind too fine and the bed clogs and channels, so parts of the puck overextract while others barely get wet, and results wander from shot to shot. Second, the fix was counterintuitive: use less coffee, grind coarser, and cut shot time from the usual 25 to 35 seconds down to 10 to 15 seconds. The cafe got more consistent shots and used measurably less coffee doing it.

The paper was written with cafe waste in mind. The enthusiast community read it as a recipe. Scott Rao, who had been arguing for coarser, longer shots for years, paired the coarse and fast approach with a lower pressure target of about 6 bar, and Lance Hedrick's videos carried the "turbo shot" name to a much wider audience. The name stuck.

Why Does a Coarser Grind Work?

Three reasons that reinforce each other.

Fewer fines. Grinding to espresso fineness produces a large population of dust-sized particles that migrate through the bed, plug its pores, and compact unevenly. Coarser grinding produces proportionally less of that dust, so the bed stays permeable from the first second to the last.

Less channeling. A permeable bed gives water little reason to hunt for a crack, and at 6 bar there is less force available to blast one open. Channeling is behind most bad home shots, and our advanced troubleshooting guide covers how to spot it.

Evenness. When every particle gives up a similar amount, the sour notes of underextraction and the harsh notes of overextraction both fade. What is left tastes sweeter without anything being added.

The numbers look odd at first. A turbo shot is weaker and more extracted at the same time. A classic 1:2 typically lands between 8 and 12 percent strength (TDS). A 1:3 turbo sits nearer 6 to 7 percent, yet usually reaches a higher extraction yield from the same 18 g, because the extra water and the even bed keep dissolving flavor. What Do You Give Up?

Body and crema. The dense, syrupy mouthfeel many people mean when they say "espresso" is mostly gone. Crema comes thin and fades within a minute, since the gentler flow dissolves less carbon dioxide into the liquid and emulsifies less oil. With bright, fruit forward light roasts that lightness reads as clarity: florals and acidity that a 9 bar shot muddies come through cleanly. With a traditional dark roast blend it just reads as thin, and the style is a poor match.

Milk changes the math. A 1:3 turbo contains more total dissolved coffee than a 1:2 from the same dose, so a cortado or a 150 ml flat white still tastes properly of coffee. In a 350 ml latte the lower concentration drifts milky. Raise the dose to 20 g, or keep turbo shots for smaller drinks. The trade in one line: sweetness, clarity, and repeatability, in exchange for syrup and crema.

A Starter Turbo Shot Recipe

  • Dose: 18 g in an 18 g basket
  • Yield: 54 g out (1:3)
  • Time: 12 to 18 seconds from the pump starting
  • Grind: several steps coarser than your espresso setting, roughly moka pot territory
  • Pressure: about 6 bar with an adjustable OPV or flow control; stock 9 bar works, just less forgiving
  • Water temperature: 93°C (199°F) for light roasts, 90°C (194°F) for medium

The method:

  1. Prep the puck as carefully as you would for a classic shot: break up clumps, distribute, tamp level. Coarse grounds still channel, and the fast flow exposes sloppy puck prep sooner, not later.
  2. Cup on the scale, start the pump, stop at 54 g.
  3. Check the clock. Under 10 seconds is a gusher, so grind finer. Over 20 seconds, grind coarser.
  4. Taste. Sour or sharp means finer or hotter. Harsh or drying means coarser or cooler.
  5. Once three shots in a row land within 2 seconds of each other, move the ratio between 1:2.5 and 1:3.5 to set body where you like it.

On a fixed 9 bar machine, expect to grind slightly finer than a 6 bar user would to hold the same 15 second time, and expect channeling to show up more readily. The shots still work. They are just less forgiving of uneven prep.

Is a Turbo Shot Just an Allongé?

Close relatives. The allongé, a long, coarse ground shot around 1:3 or beyond, has been served in Montreal cafes for years, and Scott Rao championed it long before turbo shots went viral. The allongé established the ground truth: coarser and longer can mean sweeter and clearer. The turbo shot adds the stopwatch and the low pressure target. Both differ from a classic lungo, which keeps the fine espresso grind and simply runs more water through it, usually adding bitterness rather than sweetness. The Bottom Line

Turbo shots are not better espresso. They are different espresso: sweeter, clearer, gentler, and far more repeatable, at the cost of the thick body and crema that define the traditional shot. Try them if you drink light roasts, fight channeling, or own a machine with pressure or flow control that you have never really used. Skip them if a heavy, syrupy shot under a deep cap of crema is the whole reason you own a machine, or if dark roast blends and big lattes are your daily order. The experiment costs one afternoon and the coffee you were going to drink anyway.
